RegularRandom – Five Minutes with Pumpkin Soup

This week, pumpkin soup. It’s a dreary old winter here at the moment, and I’ve been sick with the flu and feeling pretty miserable. So I made some pumpkin soup, it’s my mum’s recipe and a favourite of ours. I’ll write out the recipe below.

 

You’ll need:

  • 700g pumpkin (I like the Qld Blue pumpkin, the one with the blue skin)
  • 3-4 medium potatoes
  • 1 large onion
  • 1L chicken stock
  • 1 teaspoon crushed garlic
  • 1 teaspoon crushed ginger
  • salt and pepper
  • cream to serve

Here’s how:

  1. So simple – just put it all in a saucepan, bring to the boil and simmer until the vegetables are soft.
  2. Take it off the stove and puree the lot!
  3. Note that you probably won’t need 1L of chicken stock – you just need enough to cover the vegetables and then it all depends on how thick you like your soup!
  4. Remember that cream will split when you reheat it, so best to add just before serving – yum!

      Thanks, am getting better but they say it’s the 100-day cough! I hope note, I’m only at day 10! Yes it is a bit healthy isn’t it? I am baking a cake as I type this, so I will try to get some shots before I take it to work tomorrow. It’s one of my colleagues’ birthday 🎉

        Glad to hear it. The Big T has been in Melbourne for most of the last few weeks and says the weather has been quite cold. He’s come home with a horrible cough and tried to share it around 🙂

          Yes it’s freezing. It says it’s 6 but “feels like” 2 with the wind chill factor. I’ve definitely found this winter much colder than last. He’s a sharing caring kinda guy 😉
