Hi everyone.
It’s been ages since I RegularRandom‘ed a sweet treat. In the apartment complex where I live, a restaurant has opened up on the ground floor. The people who run it are just lovely. I have gotten to know them over the many months of fit out and met so many of the family – the husband and wife team, as well as his mum and dad, and they are such lovely people.
I popped in for a coffee on Melbourne Cup Day, waiting for my friend to pick me up, and spotted these muffins near the cash register. Yum! I vowed to come back for one at the end of the day. This is the result.
It was delicious! The earthiness of the beetroot, combined with the sweet chocolate chips, just fabulous. Crispy on the edges and delightfully soft and sweet inside. And how exquisite is that beetroot chip on top? Like a flamenco dancer’s skirt 💃!

I found the beautiful pink rice paper on the same day. We were wandering around Brunswick Street in Fitzroy, when we came across an unassuming stationery & paper goods store – what a heavenly place. I thought this paper would make a magical backdrop for the right subject and I think I was right!

PS how could I not make this post also my entry for this week’s weekly photo challenge: Temporary?!! It certainly was a fleeting moment of existence for this poor little muffin, but it served a good purpose lol.
